Potential Application of HSFI-8 Crude Protease as Meat Tenderizer and Anticoagulant Agent

Protease enzymes are that able to hydrolyze peptide bonds in proteins into simple compounds. The protease enzyme used was derived from fermented sea cucumber digestive organs (HSFI-8). HSFI-8 uses meat tenderizer as well an anticoagulant agent. samples were beef, chicken and tuna whose protein profile analyzed using SDS-PAGE. Three types of soaked at a concentration 30% v/v for 3 h. In addition, therapy the treatment CVD. second sample, human blood, tested by Lee-White vitro. Blood treated with addition which measured blood clotting time. results showed soaking beef break marked minor bands. There no change amount bands cob meat. test prolong time given HSFI-8.
